cpu cores
I am in the process of sorting out which parts i need for my first pc build, but i have a question i hadnt thought of so far, my current pc is a I5 8600K and i run multiple things at once but after a while the cpu utilistion gets to 100% and programs crash and i am thinking of getting either 9800x3d or 9700x but wondered if this would still happen, not sure if i need more cores than my current pc (6 cores) or if i need to look at certain specs on the cpu's. hope someone can help thanks.

8600K is fairly old by today`s standards so not really surprising hitting 100% use in modern games. 9800X3D is good option for gaming, pretty much best you can get currently.

You won't have the same issue on any modern cpu, even the 6 cores.

Everything that has more than 4 threads should work absolutely fine because it is harder deadlock to happen.

What programs are crashing?

when i have multiple different browsers open and doing other stuff like moving files after a while things start crashing i think its probably because of the ram running out.

It should just slow as it caches things back and fourth, if it's crashing you have a system instability somewhere.

it only only really happens after a a while(a number of hours) and then i have to restart to speed it back up fresh.

How long has Windows been installed, Windows can get janky after a bit, I tend to do a fresh install every so often, sometimes after a big Windows upgrade too as their upgrade system is still a bit meh after all this time and sometimes gives random issues.
its been installed a few years

This sounds about right. Your problems might be software in the end and if that's the case it might follow you to your new build.

I'd say test this buy doing a fresh install now. It's not like you have to wait until you build a whole new pc, plus it might answer your question. If it stops crashing after the fresh install then cores isn't the problem.
8/6 cores more than enough
no reason to get a 9800X3D.....the 9700x will be just fine if your gaming at 1440p or higher.....

what no one tells you.....the 9800x3d is only better when paired with a 4090 or 5090 at 1080p resolutions.....

this will give you a clue....a review on a B580 ARC card from intel shows that when dealing with lower end GPU's you will never really use a 9800x3d when a 5600 none X will give you the same frame rate as most games are GPU bound and not CPU bound....

A 9800x3d is very nifty if you’re playing a game that benefits from the cache at all though.

Sure if you only play typical AAA GPU taxers it’s not a huge deal but if you wanna play something like EU5 or other CPU dependent games it will be a big difference.

9800X3D is the best gaming CPU, but you'll pay a premium for it. If stepping down to the 9700X allows you to step up a GPU tier, definitely go up a GPU tier.

link disproves everything you just said.....

when a 5600 none X gives you 327 frames with a 9060xt and a 9800x3d paired with the same 9060xt only gives you 331 frames there is no valid reason to over spend......without being on a high end card over a 4080 and gaming at 1080p there is NO VALID REASON to buy a 9800x3d over a 9700x.......
