DLSS ultra performance upscales from lower resolution at 33% scaling.
So with 1440p output resolution the game is upscaled from 480p. 360p if we play at 1080p.
so Basically im playing on 1080p but the game runs at 360p? without us noticing a difference?
Well, depends of DLSS implementation you may notice a difference. DLSS works best on 4K monitors and much worse on 1080p screens.
There is also a small performance cost to upscaling. So DLSS ultra performance will run a bit slower than native 360p but much faster than native 1080p. It will most likely look much better than native 360p but worse than native 1080p.
Quality and Ultra Quality are upscaling. Quality is less upscaling, so it is rendering at a higher real resolution. the closer you get to performance or Ultra performance, the lower the real resolution and the worse it looks. DLAA is just anti-aliasing. DLAA is the better choice if your system can handle it.
For the most part, I just turn off DLSS anytime I can.
It's not "Dlss Overdrive"; it is DLSS Override. It has nothing to do with "increasing performance" of DLSS. It is to allow the driver-level setting to override the in-game settings. It is primarily for games that have DLSS Frame Generation support but haven't been updated to add Multi-Frame Generation to allow players to override the game setting to enable MFG. It does however also allow driver-level override for other DLSS settings on the other generation cards as well.

So basically if you run a game at 1080p and use DLSS many of the textures are being compressed down to 720p
DLAA is the best Quality.
While Ultra Performance would be the lowest quality setting for DLSS
