went through extensive troubleshooting alongside a friend of mine who does cybersecurity for a living, anything from firewall settings to router settings, we still couldn't figure it out. dunno if it's CGNAT that would target a specific OS, lol
Linux supposed to be stable but a simple update could cause errors - especially major system updates so it was easier to do clean install every 6-12months.
My 8y old MacOS was more stable and problems free. My Windows was better for gaming.
I can connect my phone, everything works just fine except the file transfering and storage exposing, but a USB cable is enough for me.
(similar story in Windows too, so it is more program specific rather than Linux one)
KDE connect worked to transfert files from the Phone to the PC. But, not the other way around.
It's VERY odd.
As stated in OP, I went the FTP route. Not ideal but at least I can do my things.

I don't have problem with sharing files between 2 PCs, but I better do it with something similar to SMB
Generally I'm pretty happy with Linux until I want to use some random piece of Windows software that doesn't work well for whatever reason. Hence the dual-boot setup. 99.9% of the time Linux has my needs covered. It's that last 0.1% that can be frustrating sometimes.
KDE Connect is amazing. Windows has Phone Link, but it's terrible and messy in comparison.

i dont even see it like windows vs linux anymore. windows is just another distro with a different package manager like opensuse, which you cant use unless you play opensuse. the worst thing about my linux setup is all the cool packages i have to give up
