If need be why not just run the OS Desktop at a lower res and then run your game at that same lower res to help bump the FPS.
Since when do we have Laptop Docks anymore? I'm sorry is this 2001 where we are using Dell or IBM with proprietary laptop docks? Everything is USB now.
To have the Monitor driven by the NVIDIA GPU, the Laptop must have a Thunderbolt / USB Type-C that supports DP output. Otherwise the Display is purely ran off the Intel GPU and not the NVIDIA.
If you must go with an external display then I'd look at 27 - 32 inch 1440p/240Hz and use DP. You will need an "Active adapter cable" such as this > https://www.amazon.com/dp/B0C4DB8MLL
I would ensure that the external display has DP 1.4 as well as Adaptive Sync / FreeSync Premium or Premium Pro
Just Google the exact model and from there look at the full specs, reviews and such.
