Is it OK to keep GPU fan speed at fixed speed like 50-60% for gaming?
Instead of making a curve, is keeping fan speed 50% or 60% okay?

Yes it's fine and sometimes better to do this then use a crappy curve the gpu came with.
I do this with some games so the fans don't go crazy. Temps stay within normal range. Computer case is like 99% mesh, I opened it up after 3 months and was surprised to find just a tiny light dusting

i currently set my gpu fan to always run at 40 - 80% depending on if the temps rise, some games recently are rising temps faster because of bad drivers,

(AMD 23.7.2 driver negitively impacted preformance)

but i like to use the fans it helps alot keeping system temps down there is no reason to not use the fans, also i keep my computer case open so extra air flow can poor in via the side, it also looks cooler cause you don't have the glass reflections, and its easy to power it down , hit the suply switch an swap out SSd drives between computers directly via the sata, usb is always slower on older systems.

one thing to remember is that using airflow direction will lower your temps across the system, good intake and exhust traveling across your boards will really drop your temps down dramaticly.
absolutely.. easier to keep something cool than cool it down.i run mine at idle till 40c then
kick it to its highest noise level that is tolerable to me.been running this way for 10+ years
not 1 fan failure or GPU failure.i dont like my fans ramping up and down.and my case fans are
not on a curve either they are set to a set speed.1 fan failure in 10+ years and
it was a rattle not full on failure.

You can do that up to a certain temperature if you want, but you should really allow the fan curve to go up if the temperature goes up to prevent an overheat scenario.
