How about i7-5930K, pretty much best for both worlds.
If you are trying to build this for reasonable money then i7-4790K, Z97 motherboard and DDR3 RAM is cheaper and it's still quite good for editing and photoshop.
i7-4790k (Haswell Refresh - Devil's Canyon) CPU + Z97 Motherboard =
Ideal for gaming, faster single core processing. 4 cores (most games don't currently use more). DDR3 memory.
i7-5820k (Haswell-E) CPU + X99 Motherboard =
Better for editing and photoshop, faster core processing. 6 cores. DDR4 memory. Better overclocking. Overpriced?

If gaming is your main purpose, then get the i7-4790k!
Might as well go all out on Intel Skylake Z170 and future proof, rather than a dead end LGA-2011-v3. I'm not saying it's bad (if you already have it, it's awesome), but purchasing at this point of time (2015+), I don't see the point? Anyways, it comes down to price difference really.
However, it's also about $85 more expensive or more when you factor in the price of the motherboard and maybe DDR4 RAM.
The 5820k is a gimped 6 core CPU. Either go with the 5930k or stick with the socket 1150.
The Hyper 212 EVO is the best price vs cooling ratio there is. But it's still not an incredible cooler, it just does the job. Once you get beyond the $50 price point the coolers start becoming superior to the Hyper 212. If you really want massive cooling then get the NH-D14.

This can run two GTX 980 Ti no problem if needed.

he said gimped...LMFAO!!!
Wait, here's the newly built Z170 rig my son and I put together last week as well:
i5 6600k Skylake
Hyper 212 EVO
ASUS ROG Maximus Gene Z VIII Micro ATX
16 Gb G. Skill Ripjaw4 DDR4 2400Mhz
GTX 980 FTW
2 x Samsung 850 Pro 256Gb (OS Win 10 Pro 64 bit OS only Raid 1)

LG Blu-Ray RW
Rosewill 1000W PSU 80 Plus Gold Modular
benchmarks for both are insane.
There's not a dam thing in that $1000 price tag that can justify a 5930k...nothing. Other than being dumb enough to show you have money to waste, with little return.
Get your facts straight, six-core i7-5930K costs around $570.
You are thinking about eight-core i7-5960X that costs $1000 and is indeed pointless for that money.
I think he's talking about his own country / currency? It's dang expensive / overpriced here too in NZ @ around the $1000 NZD mark, however that would be approx $630 USD - and that's just for the CPU alone (you still add in motherboard and memory, etc). Hense why I wouldn't personally recommend it (compared to a Z170 with would cost a less and be more future proofed - giving you similar or more performance in the long run), however over in other countries it might be a much better price tag, than we get here - need to compare and justify it for yourself.
Both the Haswell Refresh and Haswell-E are high-end for gaming purposes + more. You won't go wrong with either, just the price tag to look at.
