For gaming, just get the standard version. There's no need to get any version past that for gaming or general usage.
Windows 7 Home -vs- Pro < Home is limited to 16GB Max RAM, Pro / Ultimate are not.
Windows 10 Home -vs- Pro < Pro ups your Windows Updates to Business Class and allows your WU better download speeds and priority, as well as ability to defer updates.
Aside from those, no huge differences, nothing game related anyways.
To clarify this further though, simply look at "Compare Windows OS Editions/Version" on Microsoft's website. Or Wikipedia:

SL versions are released in emerging/developing markets.
Make sure you get the 64-bit Edition though and not the 32-bit Edition if you have 4GB or more RAM.
It might not be usable in a fully Networked environment either.
The serial key may also be stuck in the BIOS hardcoded, making installing a 'real' version of Windows much harder later on if you need to for any reason (such as licensing software).
