Looks pretty weak for 12600K, check your temperatures during gaming.
If temps are too high and cause thermal throttling might need to upgrade to something better like this:

looks like 8 phases total, no cooling on any of them = ~20w ea
a few to imc and igpu, 1-2 ea
probably 4-6 phases to cpu cores, = ~80-120w max to cpu
it will never boost for long because they overheat and throttle before the cpu can get warm
keep the stock style cooler on it, never use tower coolers on boards with no vrm heatsinks
tower coolers remove airflow from the board, and will make the mosfets overheat and throttle sooner and for longer
He upgraded to Asus TUF Gaming B760 Plus.
What was your framerate? GTA V has a very weird issue where it starts to stutter when your framerate is too high.

It's rated for 180 watt T.D.P. 12600kf has a maximum turbo power of 150 watts. A better cooler might help it perform better, but the existing cooler should suffice.
However, the C.P.U. cooler only really removes heat from the C.P.U. and ejects it into the case. Kinda wouldn't help if the inside of the case is saturated with heat. I'd suggest that you populate the case fan mounts if you haven't already.
Maybe open up the case and blow a case fan at it as a test to check and see if air flow is potentially the problem.
