you can use any dedicated gpu with the apu
and hybrid crossfire (dual graphics) is not worth it
only supports weak cards, and can give higher fps, but also drops below what the dedicatd card can do
but imho, the apus gpu is a good match for its cpu
pairing a mid grade gpu with it just shows off how weak the cpu really is
it will not be worth the apu upgrade
what mobo do you have?
7890k will be socket am2+, 6800k is am2
similar sockets, but the board may not support am2+
if the board supports windows 7, the cpu will be fine
if you want a better cpu to run a dedicated gpu, save up for an i3 or pentium g
they are much stronger than the apus, and capable of maxing out mid-higher grade dedicated gpus
ex your apu vs i3 4170 (intel $100 cpu and $40-50 mobo)

Or if you need a new CPU now, then an Intel i3 or i5 would be a better choice.
As far as I'm aware, the R7 250 is the best card you can run dual graphics with, but honestly you are better off getting a stronger graphics card in the first place and not bothering with dual graphics. If you need a budget GPU, get a GTX 750ti, GTX 950 or R7 370.

Currently as you say, the only way forward is Intel at the moment. That and a faster dedicated GPU rather than bothering with dual graphics.

the skylake intel hd is much better than the older ones, catching up to amd apus gpu performance
