Just better off going to a music store and looking for older models as most are MIDI or straight digital VST/VST3 these days or geared towards mobility and WiFi/BT.
I guess the RCA to mini stereo won't work then.
You can find a plethora of free Virtual Instruments from Novation and such and put them on a free DAW (Digital Audio Workstation), such as Ableton Live Free edition or Reaper.
I mean it's not the same as hand-on hardware but is free or lower cost compared to hardware.
They also have MIDI turntables that are USB, but you need to add your own sounds and such as MIDI instruments are basically shells (PC shell hardware/instruments).
You really do not want to use straight RCA to PC and you would really want to use an external DAI (Digital Audio Interface).
But the RCA output seemed like it needed an amplifier. Tried a pre-amp setup but it introduced some electronic noise <hum> and wasn't great for archive purposes.
Like I have sound cloud headphones that are USB and even have their own built in sound card.
Kind of odd you can do that with headphones but hooking up a turntable seems impossible or something.
To remedy this is to use a DAI or even a simple mixer.
Digital Audio Interface (basically an external sound card with hookups for instruments).
MIDI instruments, how can I put this, it is just a plastic instrument with zero sounds (well most of them) and you have to assign sounds using a DAW (Digital Audio Workstation), such as Reaper or Ableton LIve to trigger those sounds to make the plastic shell instrument have sounds - if that was not confusing enough.

What was I also going to say, oh, interference can also be caused by power cables and to keep power cables and audio cables separated as far/much as possible. This is especially true when using HOT XLR cables to RCA, such as my PC audio does here.
This Digital Audio Interface, does it have RCA in and USB out? Sounds perfect honestly.
Mine, I can put 6 instruments on it and 12 speakers on their own channels.
You can get smaller DAI for say 1 - 2 instruments with USB support but you would want to go with older models for RCA integration, such as Behringer.
You can use an RCA to XLR cable adapter.

Perhaps I am thinking in context of true stereo which is only achieved with certain DAI at higher depth and bit rates and not this cross-reference stereo.
Anyways, the "expert" is here so I am not needed anymore.
Then plug RCA device into adapter and connect adapter to Line-In (blue) on your Motherboard or SoundCard.
Then check the advanced audio settings in your OS so ensure Line-In is not Muted.
