You need to really sir down and seriously tweak the F out of WinOS for anything to work at all, like Ganes.
Nvidia needs to be set to prefer max performance.
Page File needs to be manually configured properly.
Disable Fast Startup + Hibernation.
Disable Xbox Gamebar and Windowa Game Mode.
Disable Driver updates for Windows Updates.
Download and install all latest drivers. Such as using the Intel Driver Assist website. For AMD that means getting the Ryzen Chipset Drivers and NVIDIA GPU drivers and disable onboard GPU by forcing apps to only use the dedicated
Hi, what do you mean? On my Laptop i have a single Nvme SSD. But on my PC i have couple and i use one strictly for games only.

Gsync is a hardware solution, using a gsync module in the monitor. Gsync compatible isn't even gsync at all, but rather using the Freesync standard. They have the same goal, to regulate frame rate and refresh rates, however they don't do the same thing to achieve it.
Seems like you've found a scenario where Gsync works better than Freesync.
None of your systems are slow just let the fps do its thing, Vsync off, gysnc on and it's butter..
I have a LG 27GL850 144hz and Phillips 48OLED806 120hz and have no issues with gysnc, just don't cap your fps so low that it may not work, ie stutter because of capped fps and low gpu usage because of it and possible screen tear as maybe below the gysnc range.
