With 6700 XT the 750W is fine no matter what CPU.
However the CX series is still a tier C (low end) series of power supplies and I wouldn't keep using it after closer to a decade of use, it's better to just replace it, the warranty is already over.

Not like your GPU is running at its full potential either because you're locked to 60Hz, it's not going to be using as much power in games that can normally run a lot higher than 60 FPS compared to games like Starfield that run much closer to 60 even on higher end machines. As far as wattage, it's fine, but a low end power supply without a warranty is not something I would keep using
the psu you have is fine
will only need to be replaced/upgraded if you get a gpu that has the 12vhpwr connector
750 is near the bare minimum depending on which GPU you plan yo use.

How old is that PSU?
Low end unit that's probably as old as his CPU if not older, they don't really make CX-M series anymore because it got replaced with the CX (2021~) units which all have triangular fan grills because Corsair is just obsessed with triangles these days
When you do a new build get a modern PSU from around 2021 or newer such as Gold Certified 850 or 1000 watts
Minimum I would suggest for modern upper mid to higher end machines:

EVGA SuperNova 850+ GT
Super Flower Leadex III Gold 850+ (Leadex III Gold has the same guts and pinout as a SuperNova G2, Super Flower manufactures many of their units for EVGA)
SeaSonic FOCUS GX 850+ (ATX 3.0 version)
It's not like that GPU is really superb for 1440p anyways.
