ps5 controller detected in big picture, but....

not allowing me to configure or use it in any game. I tried using my ps4 controller as I remembered I was able to use this 2 years ago but the same result yielded I was not able to use those controllers anymore.

In controller settings, make sure you have Playstation Configuration Support checked.

steam -> settings -> controller -> [general]
select each and give them a name thats easily identifiable
ex. dsx+color, xbone+color+v/s/x, x360 etc.. (and add location/pc name if using remote play)

on steams controller config pages, at the bottom pick the correct controller when binding its controls
each controller can have its own bindings for bpm/desktop/chord and each game

yeah I figured it out after a while... I just remember that wasn't there in the past patches when I played last time with a controller.

You also must pick a profile for the controller. If you have not done this, the profile is blank. Thus has no key-bind layout.

You also may need to opt into the Steam Beta Update via Client > Settings > Account > Beta > Change > Steam Beta Update; click OK and then click OK to restart Steam Client.
