Graphics card for 1080p@240Hz monitor
What would be better? Also what CPU so there's no bottlenecking? I don't care what color the company is.

the rtx 4090 gives best performance at all resulutoins including 1080p
the 7800 XT iis 2d in case 1600 euro is abit to pricey to you.

an 7950xX3D would do best of the normal cpus otlutpergorming the 14900k at this resolution.

but to really have zero bottleneck you might have to go EPIX for your cpu.
1080 is more cpu heavy than 1440 and 4k.
but 5000 euro cpus that perform worse in 1 core games is not a thing I'd advise.

7800X3D + 7800 XT would be good even for 1440p/240Hz
higher res is really no more work on the cpu
high fps takes more cpu, preparing scenes faster, for the gpu to generate them
And moat of the good screens now do Adaptive Sync so that 240Hz wouldn't be a static refresh rate.

I've got the "G-Sync Compatible" model.

Ok can I ask the full model of the Display?
Are we talking about e-sport games or single player AAA games?
240fps is very hard to run even at 1080p on a top tier PCs.
There is no PC that can natively do that in some games like Starfield or Alan Wake 2.

7900XTX can be faster than 4090 at 1080p in some games due to lower CPU overhead.
Yes quite true. I'd look at a more quality panel then be looking at 240hz. Plus 1080p which is complete rubbish for most part anyways. Only reason to aim for around 200Hz or higher is for esports games which you have stakes invested into.

For most games, 144, 165, 180 Hz is plenty if the panel is really good quality with a range of other good features.

1080p is still OK but no need to have a top tier GPU for that.

If somebody likes high refresh gaming then in games like Lords of the Fallen at max settings and with RT 4090 averages 105fps. Drops below 90fps.

So 4090 is good enough for locked 90fps at 1080p in that one game. No chance for 240fps in all games.

I want to play older single-player AAA games. And less demanding (not AAA) modern single-player games. Also sometimes I play CS2 online.

If older games then yes it would be best to stick to 1080p 16:9 type of Display.

But what size? As 1080p Monitors tend to look rather poor above 24 inch or so.
There is always going to be a bottleneck from something in the system, it's unavoidable.

For stable 240 FPS you want the best CPU and GPU you can afford, for purely gaming that basically comes down to the 7800X3D, and either a 7900-XTX or a 4090
You can't expect to get the same FPS or higher as your refresh rate anyways; regardless of what it is. Sometimes you're going to run something and only get maybe 60, and then in other games you might get 120, 200, 250... etc. There is no PC config out there that's going to give you 200+ FPS in everything.

Overall this why you can't just shop based around the refresh rate, but look at more in-depth reviews on the Monitor before purchase to get a better idea of overall features and the panel quality. Overall even if you happen to run a certain game and it might only do 60-100 FPS; it's generally going to be better on a panel that offers 144+ Hz over other panels that only do maybe 60 or 75 Hz. With anti-ghosting and motion-blur-reduction and quick response timings; even a 60 FPS game should look smoother overall on a better panel with higher refresh rate. Since most 60 and 75 Hz panels don't have those kinds of features that helps eliminate motion-blur, screen-tearing and such.
