The UNstated features are the fact that group policies aren't undone between patches, whereas sometime you'll find your registry hacks "fixed". Also, Pro (being targeted for professionals and workplaces) is less likely to get immediate forced adoption of some of the less well received 'consumer experiences'- IE: MS will dream up something terrible, plop it in home as a forced feature, but pro will have as an option or have a group policy to undo it.
Pro has Group Policy and also has features like BitLocker. The biggest PLUS is having Group Policy so you can make changes not available to normal user settings. And avoid crap like ShutUp10 and similar apps
