what cpu works well with a rx 6700 xt ?
and also any mobo recommendations

It`s too broad and vague question. Depends on your overall budget and what you are trying to build or upgrade. In a broad scale pretty much anything from Ryzen 5000 and 7000 series or Intel 12th and 13th gen.

Any CPU + Motherboard with PCIE 4.0 will do fine really.

AM4 5600/5700 series CPU, and yes, agree on a B550 mobo....can even consider a cheaper X570S mobo. I went with a Gigabyte X570S Aorus Elite AX + 3900X for my 2nd rig.
