If your OS is not yet installed on an SSD I highly recommend you to do a full reinstall, having the OS and software on the SSD makes the system as a whole much snappier in use.

The folders in your home directory act like symbolic links. Right click the folders in your home directory (Eg. the downloads or music folder), and select properties. In the folder's properties you will be able to changes the location where it stores its data.

Just don't. Create new folders and ignore the windows defaults. Don't call them the same name or use the same icons.

What's your reason for this? Because it seems pretty easy to manage and I've been doing it for like a decade. Like I run Documents off my D: drive. Although it made a lot more sense when I had a 250GB SSD. I probably don't need to bother anymore running a couple of 2TB SSDs.

If you have multiple ssds, the other drives can just have whatever folders you decide to put in there. It can be formatted with no folders, then you can literally place folders in there and organize it the way you want

I don't know why anyone would do windows default folders for all their drives. Makes no sense

Well once upon a time when SSDs were over $1 a GB having several GB's of user data in user folders on C: might not have been that great a use of the space. Configuring your system to use a slower/larger HDD for user folders had some benefits, in my opinion.

Also having the user folders on another drive does offer some convenience if you go to format or reinstall Windows on C: you don't have to go through and manage user data and move it to another location, assuming you even have the opportunity.

There's more than one possible, valid, configuration. Customizing the user folders may not be necessary or suitable for every system or every user, but there's also nothing particularly wrong or harmful about changing it either.

Not having a personal use for the feature is a bit different from it making no sense in absolute terms. Lots of things may not make sense to you, but in a great many instances that's going to be your limitations governing your confusion rather than your expertise.
No best bet is if you have SAY 1x SSD and 1x HDD; keep the OS folders as is. Games will use places such as AppData and Documents and some games use a User Folder called Saved Games. Then if you downloaded fils or have Documents, Pictures, Videos just download them to your HDD and store them there.
