Under my bios. The storage is listed as Raid:ssd970 evo & USB: Generic Mass Storage. Boot priority is UEFI Generic Mass Storage. Not really sure where to go from here. The board is Z790. I haven't updated the bios yet.

Are you sure you created the boot drive properly? If you're doing a clean install of windows unless I'm mistaken you shouldn't get an error about an upgrade. Your USB stick has a minimum of 8GB of free space on it?

Go half way down the page to the section that says "Create an installation media or download ISO file" and follow the instructions.
The tool will download the ISO, make the USB bootable and extract the ISO contents to the USB.
When done it is ready to be used. Eject and remove the USB and then go boot to that USB on the PC you wish to install Win10 onto.
If the system is an OEM prebuilt Desktop or Laptop; such as from Dell, Alienware, HP, Lenovo... during install select Custom, then click "I do not have a key", then you should be presented with option for which OS Edition to install; i.e. Home, Pro, etc. Select the same edition that the OEM prebuild came with (Home vs Pro). Doing so will ensure the system gets auto-activated once inside the OS and connected to internet and it will retrieve the digital license from the MS servers.
If it's a custom built PC, then always install Pro Edition. You can use it freely until are able to get a product key for it. Product Key can be purchased online for rather cheap; around 5-10$
