If that's not of your interest and you want to save money then go H110 or B150 motherboard wtih i5 6500 which is somewhat lower clocked and doesn't over-clock. I don't know how much money we're talking about here and it may not be worth it and people will be more interested in your K-processor used and so on.
I don't really think you should go with an i3 as far as "for value" goes, however if you have a hard time being able to afford whatever then going downwards is the only way to go.
Upwards I think the i7 6700K is ok too but maybe your budget/wallet doesn't say so.
All of them are capable at different degrees in different price-classes :)

New graphics cards may be released in June from both manufacturers so feel free to keep that in mind.

Not that I think you're worried about a too fast PC but yeah, you can reach that performance with more simple stuff, of course games become more complex and demanding all the time :).
The next generation graphics cards will of course be more capable than the current ones (but it would make sense for similar tier models to cost a bit more since they are new and current ones aren't but that depends on what they cost to produce and how they compete in pricing too of course so who knows.)
