What are safe operating temps for SSD (Specially 850 EVO).
Are they like hard drives? You don't want to see over low 40C's (If I recall right on that) ?

Environment Operating Temperature 0 - 70 °C Operating Temperature

to be clear, this is the AMBIENT (air around the device) operating temp, not the expected internal temp which will otherwise be probably somewhere in the middle of this range.
In general ambient temp should usually be no more than 40c anyway, so if T_AMB really gets that hot, you have other problems besides worrying about the SSD itself.
I think it´s hard to get your SSD hot like a normal HDD. You shouldn´t worry about.

If you cant hold your finger on it we resroted to this back in the day when no HW monitor installed

Over 50 is nay, under 40 is yay.
Also really depends on usage and the device it's in.
