Overclocking is the biggest myth in PC gaming. CPU overclocking is only necessary once your CPU becomes old and obsolete, and even then you're normally better off just buying a new one. GPU overclcoking is similar - it can get you a little extra power, but really you should just buy the next GPU up the totem pole.
Factory overclocked cards are as simple as they come because you dont need to do anything yourself, just plug it in and it works. And usually they have better cooling systems and run cooler and quieter because of that then reference cards anyway.
Processors generally have a comfort zone, and then some additional headroom before you start hitting their limits. Factory OC are well within the chip's comfort zone, OC and SC GPUs are normally the basis for extreme OC setups which take the clock even further.
So basically, the 1080 will work right out of the box with my i7 4790 with no issues?

Don't be. We were both newbies ourselves a few years ago, speaking for myself I know exactly how you feel. You aren't born knowing this stuff, and finding answers can be hard.
I don't know if it makes any difference to you, but my current workhorse system has a GTX970 running a fairly serious overclock. I've had it for two years, and it's running completely as-new. Well, under load it averages 2 degrees celcius more than it should - but that's only because I haven't cleaned it for a while.
Although that wouldn't improve it's reliability, or longevity. It would just make the card really slow.
