i7 4790K vs i7 2700K
This is probably a stupid question, but which one is better? I will be trying to overclock whichever one I get. Or should I stay with what I got until Skylake comes out?

Intel i5 4670
MSI H81m-p33
EVGA ACX SC GTX 780
EVGA Supernova 750G2
Fractal Design Define R4
Kingston HyperX Blu 8GB 2x4GB 1600MHz CL10 1.5V
Samsung 840 Evo 250GB SSD
WD Black 1TB 7200RPM 64MB Cache

Does your board have the firmware update that will let it overclock in a material way?

I see you have a H series, rather than a Z.

Also, isn't the 2700k an ivy on 1155 where your 4670 is a Haswell on a 1150?

I'll also be upgrading my motherboard. I can't stand the one I have now. No USB3, no SLI option, Sata ports are sticking up on the board instead of to the side. I can't do ANYTHING with this motherboard.

Firmware update? How do you mean? & yes but im also upgrading my motherboard

That makes more sense.

The better question is do you need 8 threads? Gaming performance on an i5 vs i7 for most games is immaterial. But when it comes to software written specifically to use more cores and threads, the i7 shines. If you're not going to seriously commit to video editing, I don't see the point in the i7. I transcode maybe twice a year. Hardly a reason for me to spring for the i7 4770k over my i5 4670k.

I'd say I do. I want to get into 3D Modelling and youtube videos. Hence the 3TB.
If I do heavy video editing, I'm guessing I'd want more than just 8GB of ram. I'm just going to start out though. So I won't really care how long it takes.

I probably do need the 8 threads.

Yeah....you're going to want 16gb of RAM and the i7 then.

However, you may way to try see how long it takes your existing i5 4670 to do it now. You may find that it suits your needs. It will literally cost you zero additional coin to do what you're going to do on the new system now on your existing. The 4670 is no slouch.

I guess I could just add another 8GB of RAM if I feel that the 8GB isn't cutting it. The motherboards I was looking at were dual channel with 4 slots.

If anyone has any suggestions to what motherboard I should get, please suggest it. Keep in mind my budget is $500 for the CPU & Mobo.

Then OP should go for i7-4790K or wait aa bit and get a i7-5820K 6 core for $300-$400.
