ram should be in pairs for dual-channel mode to operate (faster)

slots 1 & 3; &/or slots 2 & 4

and 8gb is generally sufficient

4GBx2 = 8GB dual channel
8GBx2 = 16GB dual channel
8GBx4 = 32GB dual channel

You always want the RAM amount divided by two sticks. You could also divide it into 4 memory sticks, but then it would be two sets of dual channel. An X79 2011 mobo/CPU can do full quad channel.

8GBx8 = 64GB quad channel

or 12g is ok if its 2x4 + 2x2

8+4 can work, but will be hybrid dual ch (if the mobo supports it)
the first 8g (4g from first 8g dimm, and 4g from 2nd dimm) will work as in dual ch mode
and the last 4g (remaining 4g from first dimm) will be single ch

it works but won't be as fast. You generally don't need 12 gigs of RAM for a single process currently so it makes more sense to get 8 that's faster.

8GB @ 1600mhz 4x2 is pretty much the sweet spot when it comes to RAM imo

Get 2*4GB=8GB and then later you can add + 2*8GB=16GB total 24GB maximum possible upgrade. 12GB might be better short term but is more limited to how it can be upgraded. Plus as already has been said RAM sticks should be paired for best results with same size, speed & brand.

Duel channel memory - use lots of two memory sticks (1-3 slot or 2-4 slot)
Tri channel memory - use lots of three next to each other
