May take some hunting down online to find a place they're in stock.

Other places to ask: https://www.reddit.com/r/disabledgamers/

If at all possible, try to find an organisation, non-profit or even a private individual in your area that's able and willing to let you try out or borrow some equipment for a test drive. The hospital might have some places to start.

That`s pretty unfortunate. Some left-handed gaming mouse with lot of extra buttons to maximize the use of left hand. Tobii Eye Tracker 5 maybe,

Pretty much a microphone. Can voice type/search.

Cortana (windows) and alexa (fire tv stick/ fire tablet)?

Found this in a search--esp. the section on mouse and keyboard options. There could be more, much more. Ask the stroke recovery specialist also, chances are he/she can gain access to borrowed materials as well.

I think the Steam Controller could be a good option. The trackpads can be programmed for movement, mouse, button presses, a dpad, touch menu, etc. And they are clickable. It has grips and gryo.

Downside is it hasn't been made since 2019 so you'd have to go to a place like ebay.

Touchscreens

What are they using it for?

What about a touchscreen 2 in 1? Chromebooks are great nowadays being so thin and light, you can position a 2 in 1 in so many ways and google voice assistant has always been decent.

If it is not limited to PC.

Flex Controller is similar to adaptive controller for Nintendo Switch.

Some Switch game like Animal Crossing is easier to operate and communicate as well.
The game is designed for beginner.
There is no simultaneous action (running and punch) required.
All action need to stop and execute.
