best you can do for now is to disable it and set another browser as defaults
I use a third party uninstaller that scans for remnants so I am assured there will be no nags or reminders that Edge is "missing" on here.
You can use Revo or IoBit. I use HiBit--a wonderful program but its installer is not signed by Microsoft so it will be flagged by SmartScreen or antivirus equivalent.
You can uninstall it via Apps and Features but there will be leftovers that you just won't want on your system.
Edit: once you're rid of it completely, I would def. set your default browser to the one you're using. By default, it's Edge if Edge is installed. So make sure to change that in the Settings app/Apps/Default Apps/Web Browser. The only disadvantage I know of to not having Edge installed is that any link within a Microsoft app like News will not open.
Anyways, I would use the windows debloat script as you can remove bloat apps, reg keys, telemetry etc. I don't know if it will affect the server but it's worth to try
Might have to domain join the normal Windows to the Windows server or something like that to do it, though... I don't actually know, have only played around briefly with Windows server in a VM and right now I'm speculating.
