Thinking 2 x 140 intake and 140s on the rear and top/rear exhaust would be optimal
For a build like this, airflow isn't super important. All you need is a steady air current going in the front and coming out through the top and rear. You don't need to spend a fortune on Corsair MLs(although that'd look and sound great...) All you need is steady flow, don't overthink it.
Air naturally rises. That means bottom fans are always intakes and top fans are always exhausts. Front fans are always intakes because rear-intake isn't practical. Rear is exhaust because you can't add enough fans for good airflow.
I would run twin 140s on the front. A 140 is slightly less powerful than a 120. On average. But a quality 140 is still a very potent fan and most than powerful enough for your build. My go-to picks are the BeQuiet PureWings 2 for pragmatism and Corsair ML140 for looks. The PureWings range are paired-back Silentwings, but are still surprisingly powerful, whisper quiet(actually almost silent) and cost a fraction as much. As a matter of fact they're almost as quiet as the much more expensive Corsairs.
Corsair's ML140 has a sexy frame, lighting and it's very powerful. It's also extremely quiet. And extremely expensive. My case has MLs on the front for looks and intake pressure, Purewings everywhere else for practicality, and as of today Noctua IP52 Industrials up top to force air through the radiator.

3x 120mm fan has a combined airflow of 153 CFM and 1.88 mmH2O pressure per fan
2x 140mm fan has a combined airflow of 112 CFM and 2.15 mmH2O pressure per fan
Unless you're pulling air through filters or a Radiatior the pressure is less significant so as 3x120mm fans move 20%+ more air I'd use them. 120mm are also a little quieter than the 140mm.
