Both require a very high end system.
You'll be playing at 'competitive' settings (aka low) to hit 300+ fps in most games on the 1080p panel to really get the most out of it and, honestly, if you are not really good and at the top of your chosen game, it's a waste.
As for 4k 120, that's more for maxed out gaming, on a very high end system, expect 90-120 in AAA and 120fps in esports, looks great, bit of a waste on anything below 48 inch in my eyes.
The sensible / best all around panel would be 1440p, 240Hz panel, you'll still need a very high end system to really make use of it, but at regular desktop size screens will look great and has a high enough fps for most in a competitive setting.
If you have anything below a properly high end system, a 1080p 240 or 1440p 144 would be a far better option.
It's a standard for console gaming (PS5/Xbox Series X).
None of them can hit it without notably turning down graphics though.
As for OP, yeah you are good to go then, just figured I should check as a lot of people can be frankly delusional.
Id go for a 32-48 inch 4k screen though if it's mainly for non competitive stuff, the oleds are great options now and will be a really immerdive experience, even if you need to vet a bigger desk or wall mount to make space :)
At 27 inch, honestly, 1440p looks practically the same in motion so should still look at the options available at the time, ultra wide would be worth a look also, 3440x1440 with your setup at 200Hz would be on my list to look at.
The 3080ti doesn't cut it for AAA 4k 120hz.
It can with setting adjustments (OC won't be enough either) but as you already stated you would go for 4000 series I think it's fine to buy a Panel with 4k 120hz in mind.
It's likely enough that a 4080 or so will be able to handle it although still just in the averages and not in the min fps.
It depends entirely on the game, large open worlds, yeah, it won't pin 120, but neither will a 3090/ti, it should get a solid 80-90fps in the most demanding games pretty much maxed out at 4k, with more close range games able to pin the 120fps.
Throw a good overclock on the card and keep it cool and it should do fine, if it's watercooled, look into a bios swap to a higher power limit as a way to unlock a bit more performance.
While my experience comes from a watercooled, bios swapped 3090 strix, its not that much ahead of a 3080ti and I'm also playing at 4k, albeit on an 86 inch TV screen from the couch.
It's not hard to find AAA Games the 3080ti can't handle 120fps without tweaking of settings.
Good card though it's just GPU's aren't there yet.
But to me 4k/120fps for AAA also in general feels somewhat insane to talk about :D
