Only thing to note is that I would not go for very cheapest motherboard with i5-8400 but something with 4 RAM slots like Gigabyte B360M or MSI B360M PRO-VDH,
Gigabyte B360M DS3H has also 4 RAM slots but it seems to be crappier quality then Gigabyte B360M.
you're overthinking this. whichever you decide to buy will be fine.

Ram speed is 3000mhz out of the gate for 2600/2700 and ya you'll need to update bios on the B350 so maybe wait a bit more until the dust settles or get the cheapest 470 board.

Actually no you do not; something like MSI B350M Mortar runs them just fine.
X470 is just for new builds. As long as your older board has the latest bios update; u'll be fine.
And 2600X stomps an i5-8600K quite easily, well worth it.
But if you do not have any AM4 Motherboard at all yet, look at a higher end X370 or X470 Motherboard; for sure. Look at ASUS or MSI; all the others for AM4 are complete junk.
