Well yeah you notice the extra crisp contrast of VA panel right away but the color accuracy is not quite there compared to IPS, if you work with some photo editing or stuff like that it will probably matter but just for gaming it usually doesnt matter much.
G-sync is worth it if you have decent Nvidia card, it's much more smoother experience then without it. But if you cant afford G-sync then it's no point to bend over backwards to get it, you can still game without it.

I would go for Predator, it has pretty much everything going for it if you get the good panel.
IPS panel, 144-165 Hz, G-sync.
Second choice would be MSI, but you dont have G-sync and curved monitor with just 27" non-ultrawide doesnt really give you the effect from the curve like 29-35" curved ultrawide would and is mostly pointless.
The Samsung quantum dot with HDR is not that good, no G-sync and HDR support is mostly non-existent in games right now or just plain broken in Windows 10.

Also, is 10bit colour noticably different to 8bit, or is it better suited to professionals?
There are two versions of Predator though, one with IPS panel and 4 ms response time I posted and one with TN panel and 1 ms response time, TN panel doesnt have as good colors then IPS but is better for CS GO players and such.
10 bit vs 8 bit color only matters if you do professional level video or photo editing and has more to do with postproduction of video and photos so you can acccurately match real life colors with video and photos. Human eye cant really even see so many color shades as 10 bit provides and majority of people dont even notice any diffrence between 8 bit and 10 bit.
Most of the games in that great list have only some partial support for it, I think only few games like Far Cry 5 have actual real HDR support.
And no I dont have HDR monitor myself and base this on what I can read from reviews and Youtube mostly and there have quite few people who had issues with it.
Doesnt mean that every HDR monitor is crap though but I think the technology is still way too new to jump on it, especially with the new high response time, high Hz HDR monitors that are coming and are gone cost thousands of dollars.
I was also reading up reviews the samsung has much better picture quality and accuracy. Though, it doesnt come with g-sync.
Is screen tearing in 144hz monitors noticable though?
People have issues with all sorts of stuff that most others don't, you are more likely to find people posting issues than the people that have no issues.
The response time on my HDR TV's is 25ms with HDR active and not really noticable. I really hope the pre order prices in Europe are highly inflated for the 4k 144hz HDR monitors, I was hoping they would be around $2000 not $4000.
