Aorus app?
Is it recommended to download the driver updates on the Aorus app or not?

The AORUS apps aren't necessary and a lot of it is basically just bloatware, so no. Just actual driver updates for hardware and BIOS.

Ah okay, cool. So even if I did install the updates it doesn't really affect my system? I got told by the pre-builder to install them to be up to date.
No, I wouldn't trust software with this. Also this software is just useless bloatware, it spies on you, it slows your PC down, it might give popups advertising Gigabyte products etc..

RGB Fusion trips EAC, and some versions of it can cause your fullscreened game to minimize. Totally ruins gameplay.

Gigabyte Software is trash - the only half useable thign and unfortunatly "needed" software is RGB Fusion. However it is incompatible with other RGB software such as Asus Aura and will cause both programs to bug around.

Indeed, "needed". There are open source alternatives;

Hm, what about the Asus software

It's all crap.
The Asus Aura Software is actually quite nice. Even G.Skill did a 1:1 copy of it for its RGB RAM.

It's not really needed but what use foes RGB have if you can't change the colors or control it at all.
If you are using the software keep it up to date. It was reported a little while ago (Gamers Nexus) that RGB software is now being used as an attack vector for malicious software and the ASUS software is susceptible to "ShadowHammer".
Dang gotta stay on top of it then
Should I just completely uninstall the app then?

Yes, you don't need it. That pre-builder doesn't know what he's talking about if he said you do need it.

Out of curiosity I did try it once. Can't remember a single option I'd pick to use it over the accessing the Bios. Quickly got uninstalled and never looked back.
I use the Gigabyte RGB Fusion app but don't leave it running in the background, UAC is always disabled for me (gotta be the most annoying "feature" for Windows to me) and I use SIV to set fan and pump speed curves. I have no trouble with it but then I very seldom have "issues" with my PC, minor stuff with Windows is always easy to solve.
