What about the GPU 8 pin cables that are currently powering my GTX 1070? Will they need changing or will they be able to power the RTX 2070 super ultra card aswell? I didn't get any power cables with the RTX 2070.
The 2070 would require both an 8 pin and a 6 pin connector. The PSU may have a cable with both 8 pin and 6 pin connectors or it may have separate 6+2 pin cables. If your current cable only has a single 8 pin or a single 6+2 pin connector then your PSU would have came with other cables. You'll need to connect another cable.
Just to point out a 6+2 = 8 pin is no different than an 8 pin. So you could also use an 8 pin and a 6+2 pin(just don't use the extra 2 pin part) or use 2x 6+2 pin connectors and not use one of the 2 pin sections. That said, if you have an 8 pin cable and a 6+2 pin I'd go with that option. Looks neater.

Technically your current drivers should be fine.
Personally though, I'd boot into safe mode. Run DDU to wipe drivers and shutdown. Then switch the GPU.
first run ddu and select options for wiping monitor, GeForce Experience and Vulkan. Allow for safe mode. Exit the options and ddu app and relaunch it. Select safe mode and restart options
Once in safe mode and ddu loads up click the option to disable Windows auto driver installer. Then pick nvidia and click clean and shutdown. Then install new gpu, it's needed power cables (don't use power adapter in the box) and connect display to.gpu and ensure monitor is set to correct input. Power on system, won't in Windows go download/install latest driver from
