edit. Which of these builds could I go with? Or should I stick with my specs?

I'm sorry your standards are so high.
Most people would be happy to even have a 1050.
It has been released 3.5 years ago. Graphics performance has been growing rapidly lately and it makes no sense to buy outdated graphics now. You are trying hard to offer OP the rig that is completely inappropriate for modern games.
5600XT also isn't useless, considering it's about as good as the 2060, and both cards are very capable at 1080p. Is the value good now? Hell no, but that doesn't make it a bad card either.
Turing was a bad value but it still won. Ampere is going to kick ass because Radeon has nothing comparable until they release RDNA2. Once the 3060 is out, RDNA is completely toast.
Edit
I found a leak that said it would launch at 499 us. That seems really steep for a gpu.
What's somewhat under 300 that'll be good for me? I was previously looking at the rx 5700 xt & rx 5600 xt. Will either of them be good enough for me?
RTX 3000's value is insane.
1,225.65 bucks us. I would prefer a more budget gpu. Would either the
rx5700 xt br good options rx 5600? If not, what other choices do I have for an amd gpu good for 1080p gaming and video editing?
There is no reason to pay 400 for a 5700XT when for 100$ more you can get a card that is AT LEAST 50% faster across the board and has hardware accelerated raytracing. 500 for a 3070 is a steal.
