Is there a big advantage of using my own router ?
Right now we are for wireless just not Ethernet. I have wireless turned off on the AT&T gateway/modem and we use a ASUS RT-AC66U B1 router as a wireless access point I guess you could call it. Would it be better to use this router, ASUS RT-AC66U B1, as a full replacement for ethernet connections too ?
Can the ASUS RT-AC66U B1 handle a self created home VPN and 1 Gbps ethernet ok ? (That is one thing I kind want is my own VPN server to be able to connect to when out and about if possible.)
For fiber it should be fine to just use their supplied modem. If it is a Modem + Router all in one, you should be able to disable the WiFi and set Router to Bridged Mode to allow the use of a 3rd party modem. It should tell you on the config page what Ethernet port is used for bridging

So I'm about to try out ATT 1GB Internet soon. I should turn off the wireless setting on that ATT Box and use my own router instead? If so, why should I use my own router instead of the one given?
This is all good but I have a problem. I don't want to put my router I bought in my garage with my AT&T gateway/modem
Is there anyway to still control the whole network with just my third party router but keep the in the living room ?

I want to keep the third party router where it is but if possible still be able to control the whole network with it and not just the wireless.

you can set subnets on the router, define which devices are connected to which vlans
either way the isp will not be able to see whats going on behind your router

How would I setup my gateway/modem still being in garage while my main third party router being in the living room controlling all of my network ?
I think set your ATT Router to modem no wifi connection then connect it to your main router that you will be using.
You will have to do a direct connection between them. This means that you will have to install an ethernet cable from your garage to your living room. Another option would be to ask your ISP to move your modem installation to your living room but I guess that they didn't do it in the first place due to some technical limitation (which could also affect the installation of the new ethernet cable).
