Any gpu will have issues running a game on all 3 even with modern ones but that can easily be fixed by having it ran on the middle on more demanding games.
A lot of games have issues with even normal ultrawides and could only get worse on a super one plus many video sites won't also support them as well.
Relying on 3rd party apps to fix things can be hit or miss also plus if anything happens to a monitor you have backups unlike just relying on one monitor.
Anyone else have a take on this?
I would definitely go with the GPU upgrade though
I would rather go for a larger and better quality screen. (not a ultravide)
If not then stick with 2-3
3 monitors makes more sense over a single ultrawide.
i'd be a mess trying to get a game to run on only part of the screen with an ultra wide.
i could see one ultra wide and another 1080p or 1440p 16/9 monitor to complement it
but not just a single ultra wide vs 3 monitors, i'd choose the 3 monitors anyday.
aswell like the other guy said trying to run the most recent titles on an ultrawide (assuming atleast 1440p) you're gonna need a pretty chunky card to do so at a nice framerate.
its so annoying trying to use "windows multitasking" when you're wanting to have something else going like a movie,discord,youtube or whatever.also makes it alot easier to check messages or whatever else you need to without tabbing out of your game.

An update for you, i've bought and installed a Gigabyte Geforce RTX 2080 Super Windforce OC 8192mb graphics card. My thinking being that which option i do, Super Ultra Wide or 3 Monitors i'll need a beefier GPU.
(I had to promise not to buy the PS5 until at least mid way through 2021 in order to be "allowed" to buy this GPU along with the monitors. But I was fine with that, they will probably be cheaper then and there will be more games out for it too.
Oh and yes, i do occasionally work from home and need at least two monitors to do that effectively.

I used to game on a triple monitor setup, 3x 1920x1200 (I was among the first with a triple monitor + HD5870 setup in my neck of the woods), a ways back and while the experience was good (had upgraded along the way with CFX GPUs), I couldn't quite take the cable mess. And although I'd more or less tuned out the bezels separating the monitors, I still find it annoying from time to time.
Now that I've gone 21:9 and 32:9 (effectively 2x 27" 16:9 1080P monitors side-by-side without bezels), would I go back to 16:9, short and sweet answer is an emphatic 'NO!'. I enjoy LB movies on my 21:9 monitor which I'd crop to fit the full screen.
For example, this is Alita cropped to fit the entire screen of my 21:9 monitor (2.35:1 format is pretty close to 21:9)

That's a really nice set up, and your right, movies look really good on that.
Have you encountered many issues with games struggling to "adapt" to your Super Ultra Wide resolution? And do you use any software solutions to counter any issues, ie, to create a virtual 1900x 1200 monitor in the middle of your screen (and thereby allowing you to have a browser etc on the left or right of it.
As for software to force 16:9 aspect ratio for games, I've not bothered as it defeats the purpose of going 21:9 and/or 32:9. But, I do have the added 'safety' zone of having a HTPC rig (i7 4770K, 16GB RAM, GTX1080) which is hooked up to my 4K TV for some 16:9 action (the GTX1080 is capable of gaming at 4K, you just have to tone down the ingame graphics settings to mid to get playable framerates).
I have been using 21:9 since they first came out and never had an issue with games. If the worst comes to the worst then you can always play the game with black stripes. Not something you want to do for all games but most games do work at 21:9.
I will probably buy another monitor in a years time or so and it will be probably be 21:9 or 32:9.
