Possible to use 3x8GB sticks?
I'm running out of memory playing certain games like RDR2 which causes them to crash.

I currently have 2x8GB sticks on a Gigabyte X570 Aorus Elite board and was thinking to just get another 8GB stick, but I'm guessing this would cause issues?

Would this work or would I need to get 2 extra sticks to maintain dual channel?

See, what would happen is you'd be using Flex mode; where the CPU runs equal capacites in each channel in dual channel mode, then the remainder as single channel.

would not cause issue at all, thats what i am using.
Dual channel would still work fine providing your 2x 8gb are in the correct slot.

it will works, somebody still using for example 12 GB of RAM.. 3x4.

Okay, thanks for the help guys. RAM prices look decent atm so I'll consider going the safer choice and get another 2x8GB
Dual channel (and quad channel with supported motherboards and CPUs) is ideal. 3x8GB would break dual channel and cause worse performance than having just 16GB dual channel.

most boards can run in mixed dual+single ch mode
it will use dual ch for as much is in the dual ch slots
8+8, 8 = 16g dual ch + 8g single ch speeds
8+4, 4 or 4+4, 8 = 8g dual ch + 8g single ch
best to put matching dimms in the same colored slots
