As for build time, that all depends on the parts you select (in/out of stock) any tweaks that require stability testing. Overclocks and delidding. Looking around 7 days for a standard build and longer if you want OC etc. Also depends how busy they are as building obviously take more time than merely shipping the parts.
Oh if you use their system builder and want a different part that isn't listed, case for example, order over the phone and they'll happily switch parts, assuming they're compatible.

Could actually be cheaper to have a board without wifi and purchase a dedicated wifi PCIE card.
Bare in mind wired is better for gaming. wifi is more likely to have connection variances, ping spikes and even drops compared to a wired connection.
Most people may be aware of this, but necessity and convenience sometimes trump optimal.
