Windows 10
My Motherboard is an ASUS P8Z68-V LX they are no drivers for Win 10 for it.
Will it still work ?
Did someone try it ?
Should i stay on Win 7 ore try to Upgrade to Win 10?

Have it set to ignore your gpu so you can handle those drivers specifically all yourself and not be asked to update them when you don't feel it's needed yet.

Mine's ASUS P8H61 and it works wonderful, so expect yours to work as well, as yours is even better.

You dont need their drivers
Download the soundcard and ethernet drivers from the Realtek website

The normal realtek soundcard driver wont be the one designed for your board but it'll work just the same. For ethernet just note the ethernet adapters name/version and get the driver from realtek as well.
