in what manner and how much did you put?

While heat may be mainly in the middle it does spread out, so its good for the entire CPU to have a coating of paste on it, even if the cooler doesnt cover the entirety of the CPU.
Never tried the heatpipe method so cant comment on that
But all in all, applications rarely look 'as good' as they do in the video.

the stock cooler may be fine for general use but not for gaming
I opened the side of my case and now I'm getting 70-80C while playing AC Odyssey. This is not a solution but it might be useful info.
Not shocking because AC:O is still new with plenty of performance issues, and you're using hardware that is just starting to show its age.
While a beefy air cooler from Noctua would help tremendously, it'll still run pretty hot on games that push your CPU's limits. Better off just getting a CM Hyper 212 EVO or Cryorig H7.
Then you aren't getting adequate air flow into your case... Even if you spent 50+ on a beefy air cooler, it won't do much if it's not getting enough air.
