Aim for 4790K or newer.
2700k is fine for today's high end gpu's when overclocked to around 4.6ghz or higher... Hell even an x5675 @ 4.5ghz on the x58 platform is enough for a 1080 ti and I have personal experience with one paired with a 1080😉
Get the 2700k.
4770K or 4790K is basically the minimum you'd want, anything less won't be good for modern games, or GPUs

I wouldn't buy an i5. And if I was spending money I buy something that is current tech. Saving a few bucks on a cpu if you still need to buy mobo, memory, gpu, psu isn't a great idea in my opinion.
