I think Store being enabled installed that stupid game, so I uninstalled store and still no sight of that saga game, nor store.
The other apps doesnt bother me that much.

Same for Cortana, as you can just disable it completely.
What I don't like about this OS is how it tries to hide some settings behind pretty interfaces that do nothing but make me click 7 more times and be forced to look on the Internet to find the old version of things, still buried somewhere. Or how now you don't get to see a clear progress bar when Windows is downloading updates or virus definitions. You just see those moving dots and are left to twidle your fingers not knowing if the update will take 5 minutes or the whole damn day.
If that Windows TLDR you are talking about fixes those behaviors, I may change to it too. >.<

Search has been integrated into Cortana, so that's why you might see it under processes when you've disabled the assistant part of it. Shutup10 should take care of all your concerns while not sacrificing any compatibility or security.

I suggest not worrying about windows 10 too much and get another computer for anything else. A low spec machine with linux is usually great wth the exception of video editing. Just make sure the onboard graphics is good enough for your needs. Oh and KVM switch.
WinDows LTSB Now called LTSC is a full Official windows 10 that is only for enterprise but it removes cortana and useless blootware, but you Cant buy a license, they are vlk channel means you need buy 100 or 1000 you can crack it but crack the ltsc is hard because is the new version and is patched but is 10 times better that windows 10, but games like gta cant play unless you know how add kb
