I know, still would not count it as full two steps.
For 1440p yeah, for 1080p would not make much difference.
Yes I also find it disturbing as well.
To have a male teenager even, in this day and age, basically "afraid" to pickup his own two hands, do research, make choices, decide on budget and then parts that make sense for that. Then put the PC together with basically tools EVERYONE should already have in their homes; multi-tasking, multi-bit screw-driver and their bare two hands and an once of common sense. Or even just a few basic screw-drivers; don't even need anything fancy.
Something in our world is VERY wrong. And I speak to people of all ages, I teach kids and adults alike how to built their own PCs, install their OS, manage their OS and Accounts... Look at first I was shocked at just the United States, a country I was born and raised in, then I see it really is NOT different in other countries regarding this kind of uneducated people. Look all you really NEED to do things like putting PC together and making it work and setting it up properly are; guess what, not even a 8th grade education; MUCH younger folks can do this. Kids teach themselves today how to be creative, play instruments, beat video games in a legit manner, go online and write and viewer others content to get inspirations; so if our young children can do THAT, what is the excuse of everyone else in the world, form various backgrounds and ages.
In today's world, you all have it extremely easy when it comes to HOW you can learn things.
Search Engines, Video Tutorial Sites, Social Media, Forums, Blogs, ... the list goes on, you have ZERO excuses for learning whatever it is you wish to do and then just go get up and apply that for real.
No, it's not me getting older, I move with the flow very well at my age I confess....
I'm not attempting to be like "OMG the kids these days" NO. Look people change, generations grow up a little differently then the last in some manners. But overall the basics of going out and being self-reliant and WANTING to learn; that is important, and if for any reason humans anywhere are not applying that all on their own, something is very wrong. Never be scared to go learn and apply it.
It's too easy. Google it, do exactly what the first search result tells you and don't think twice about it.
Ok it's not always THAT easy... but still I hope folks get the point.
Always use some common sense to where you are thinking and learning along the lines.
Don't be afraid to ask question, no matter how "dumb" they may appear to sound out loud.

"How will these basic spec combos perform in a game, together?"
There are enough (way more than enough) solid truth-based videos on YouTube and other places where if you search a certain way, the results should be plentiful and to the point.
For example: YouTube Search this question by:
CPU model + GPU model + Game Name
"i3-8100 + GTX 1050 Ti + GTAV" < Yes just like that (no quotes)
Yes there are other factors; OS, RAM, Settings, etc... etc...
But overall this can easily give a to-the-point and easy means of answering this kind of question.
I would say 65% jump in perfomance is well worth it and if you have a 1440p monitor it's a no-brainer, just turn around and sell the 1060 and get some cash back.
Even 1070 Ti and 1080 can struggle sometimes with great average frame-rates in some games @ around 1440p @ 120+ Hz
With that same logic, even a 1080 Ti falls short of that expectation on many titles.
On a buggy game maybe; one of them does most games @ 2160p just fine to be honest.
Course 2x 1080 Ti or 2x 1080 is probably better for that overall.
Since OP already has 1440p / 144Hz / G-Sync
Options are limited; you really want a 1080 Ti here.
Not just "buggy games". There are plenty of games that will struggle with 1440p.

While the 1080 Ti is an increase in performance, which is not in question, but it still struggles with 1440p in many games, just like the 1070 Ti and 1080 like you stated. All three would still need to lower a setting or few to get within that performance metric in some games.
