Computer building.
NOTE: Not a total expert on Computers, doing my best with my lack of Knowledge, thanks for understanding.

I'll be straight, I'll list some CPU, Mother chips, GPUs, etc. i had in mind to build my first computer, my current investment limit is 3200USD (With some time might increase considerably).

I'm looking for the highest end possible without a lot of overheat, looking to run Far Cry games at Ultra with 80FPS+ (Far Cry, AC Origins, GTA V modded, Wolfenstein, etc).

I'd like to know opinions on recommended pieces or if you have a better suggestion, please share and also if you can, tag the price alongside.

CPU list:
1. AMD Ryzen 7 1700x
2. Intel Core I5 8600

GPU list - (Nvidia preference):
1. GTX 1080 Ti.
2. GTX 1080.
3. GTX 1070 Ti.

MOTHERBOARD NOTE: Haven't fully checked compatibility with CPU, but as far as I'm concerned, all the 3 options i have in mind do actually work with Intel Core.

CPU: i7 8700K. Far superior to any of the others in your list.

GPU: Depends on your choice of monitor. 1070Ti for 1440P, 1080Ti for 4K.

Motherboard: Asus TUF Z370 Pro. Z370 is necessary for Intel eight-gen CPUs. Z270 is >NOT< compatible.

CPU Cooler: Cyrorig R1 Ultimate or EK Supremacy 240

Case: Whatever you want, so long as it's a Full ATX.

RAM: G.Skill Trident-Z 16 GB

Storage: Samsung 850 EVO 500 GB + 4TB Western Digital Black series. Full-size SSDs are not worth the money.

Power Supply: Corsair RM 750X

Added a solid monitor, so you could run anything at ultra on 4k with FreeSync 2 as long as you don't run into a CrossFire trouble.
That's a personal choice. At 4k Far Cry 5 looks amazing and while the 1080 Ti can't hit 60 FPS "always", it'll hit it most the time (I know because I run it myself).

If you noticed, I suggested two Vegas which can easily run 4k. Also, HardOcp recently wrote a article about FreeSync vs G-Sync and HDR. They did blind tests with 10 gamers and since they couldn't tell which one was better, they chose Freesync as a better option because it not only doesn't add up to the price of the monitor, but also lets HDR work while frame sync is functioning.

G-Sync currently doesn't support running HDR at the same time. If he buys a HDR supported, FreeSync QHD panel with just one Vega, it would look glorious in HDR supportive games like Far Cry 5.

But yeah, I'm not against 1080 Ti + QHD G-Sync myself, it would also make a solid choice. BTW, 27 in 1440p panels are not ultrawide for the most part.

Best 1440p ultrawide with G-sync is Dell AW3418DW 34" currently, 3440x1440 takes less oomph to run then 4K so one GTX 1080 Ti can handle it just fine.
Price is the issue though with $1150 but can be achieved with your budget like I used in one of my builds above if you dont go too overboard with bling and absolute best quality parts.

Do not buy i7-7820x. It is not intented to be used as gaming CPU. Its cache, core-to-core bus (mesh), execution units (8 lanes vs 4 lanes for desktop Core i's and 2 lanes in Ryzen CPUs) optimized for high performance computing and work worse in simple desktop applications like games. Its fairly obvious that sophisticated 512-bit EU consumes more power and hence more difficult to overclock than pretty simple 64 or 128-bit AMD units.
I'm not going to suggest the 7820X, but it doesn't really "work worse" than non-HEDT chips. Mine is at 4.8ghz with 1.25v and it crushes any benchmark or game I throw at it. As long as all 8 cores are in use, no other 8 core CPU out in the market now will beat it. IPC is only slightly behind 8700K with around 400 pts less on Geekbench and that's nothing really worth speaking about.

It works hot, yes. Boards are expensive, yes. But it does overclock better than 8 core AMD chips, and it's actually a very well performing CPU.
Two Vega 64 Strix in CF will easily run the crap out of 4k 60 HZ. Please look at what I actually suggested.
