It's more or less a personal thing, if u like the optic of the strix, amp, exoc, hof, gaming x and so on.
Gpu's with blower cooling design like the FE or asus turbo, don't rly have a good cooling solution.
So ya, go with the custom cooler design like gaming, strix or so.
More power, well titan, but the 1080ti offers enough power for the next x yrs.

They definitely are. From what reviews suggest, ASUS's edition is probably the worst out there.
Differences are minimal, usually most different in cooling potential or PCB configuration, but in the end a 1080 Ti is still a 1080 Ti.
The biggest factor in performance differences are not between different models, but rather luck of the draw in the silicon lotto.
Your best bet is to go with something that is aesthetically pleasing to you, has a cooling solution that works with your setup, and has an acceptable warranty for your locale.
stepping down form those trhe 'best' cards will be a tie between the evga ftw3, msi titanium and asus strix.

the evga 1080ti ftw3 elite is now offered with 12GHz memory over the 11 on the other cards, but you need to jump through a few hoops to be allowed to buy one of the el;ite cards directly from evga them selves (100 forum posts, registered a couple of evga products within a year etc).
Oh, and sorry for misusing term "GPU" I kinda used it as if it refers to the entire graphics card and not only one component of it, as I said, total dolt when it comes to hardware, but I'm learning.
Pascal is heavily limited by voltage. No matter how binned, you will always hit that voltage limitation as you approach 2.1ghz.
Last that I heard, the record holder of just under 2.5ghz stable (debatable) was done with a founders edition (reference) on LN.
As far as air coolers go, pretty much all of them will go a little over 2ghz no problem. As far as anything higher goes, it is luck of the silicon lotto. Sure, getting a guarenteed higher binned card, like the Kingpin, will help in that regard, but it doesn't mean that the other card options won't get a chip able to clock as high. In fact, most cards are able to go over 2ghz without even touching overclocks, or just boosting the power limit. You can thank GPU Boost for that.
The biggest difference in all these cards basically comes down to cooler and PCB. And PCB doesn't really matter too much with the way Pascal is designed, and limited in PCB design as well.
