Pcpartpicker compatibility note
The Phanteks - ECLIPSE P400S TEMPERED GLASS ATX Mid Tower Case supports video cards up to 395mm long, but video cards over 280mm may block drive bays. Since the EVGA - GeForce GTX 1080 Ti 11GB FTW3 GAMING iCX Video Card is 300mm long, some drive bays may not be usable.

I'll use 1 HDD and 1 or 2 SSDs.
Is this something to worry about or will it be fine?

Yes, not enough drives to be of any issue with GPUs.
In that particular case, each drive has a tray, which is individually removable, allowing longer GPU to easily fit. Simply mount the drives so as not to be in front of the GPU's overall physical spacing / length

the picture on Row #4, Picture #3 clearly shows these modular drive trays

U also are not bound to those trays, drive can be mounted to both sides of that main vertical tray, as well as the bottom area, when modular trays are removed.
