Very demanding.
1x 2160p is 4X more than 1080p
3x 1440p (going by 16:9 ratio) is 5.34X more than 1080p
So even if you are able to run at around 60 FPS @ 2160p, don't think you will get nearly that on 3X 1440p, no way.
If you really can drive a decent FPS at 2160p, I'd stay there and just connect a 2nd Display for secondary display purposes, such as displaying helpful apps on that 2nd screen while your Gaming on the better 2160p Display.
Otherwise you'd probably want to go 3x 1080p to do NVIDIA Surround with a decent FPS at this res.
Overall, if you want that wider FoV experience, then go look at the 1440p screens that are Ultra-Wide 21:9 Ratio instead.
3840 x 2160 = 8294400
2560 x 1440 x 3 = 11059200
About 75%. So take your 4k fps, then take 3/4 of that. That's more or less what you should expect, assuming you have adequate vram to not make it tank all the way down.
