Will a intel core i7 5820k 6 cores 15mb cache bottleneck a 1070?
I am going to upgrade my PC with a GTX 1070 i am moving up from a 970 so I wanted to make sure my processor is not going to bottleneck my new GPU.
Going from 3GB VRAM to 8GB will no doupt help but I wanted to make sure that my processor won't hold me back from being able to max out games, especially regarding texture quality, and get 60FPS or above at 1080p.

Slightly odd choice of CPU for a gaming PC, but it won't bottleneck at all. You should have no trouble getting 60+ FPS at 1080p.

Agreed, but it's what OP has. It's not a bad CPU by any means, just a slightly odd one.
