6GB is preferred, but 3GB is suitable for 1080p and below resolutions.
Just get whichever one you want and can afford that will suit your needs.
i just purchased a few moments ago the EVGA GeForce GTX 1060 6GB SSC GAMING ACX 3.0 so i'll be good with that for quite a few years to come.
-KFA2 GTX1060 OC 6GB
-GIGABYTE GeForce GTX 1060 WINDFORCE OC 6GB
-other with similar price and not reference
KFA2 is decent enough brand, it's mostly sold in europe and not that well known because of that.

KFA2 or GIGABYTE WINDFORCE?
But whichever one has the better design/cooling and better warranty will suffice.
All three GPUs (RX 480, GTX 1060 3GB, GTX 1060 6GB) are good enough for 1080p. GTX 1060 6GB has best performance of these 3.
You could also check out alternatives from Palit, Gainward, MSI, etc... pretty much any dual fan solution from those will suffice as a decent plug & play card.
