Longevity of a GTX 1080 for 1440p
How many years down the road do you feel that'll take me as far as gaming length with that one card?

Just like how 1080p resolution is already maxed out.

1440p resolution is maxed out for very high to ultra settings. If the monitor resolution doesn't increase (Including using DSR - Dynamic Super Resolution, which down-samples higher resolutions), then you can sit happy on 1440p for years. It will just become like those old school CS:GO gamers on 1080p with high refresh rates and response time (over higher pixel count).

Nvidia Pascal (GTX 10xx series) costed $7 billion and took 2 years of development to overcome a 7 year bottleneck in graphic cards. It's the tick as well as branching into VR content (12 3D objects generated in a single pass to realistically bounce sound, light, and physics between - rather than just guessing upon 2D image frames).

Nvidia uses tick/tock development cycles.

Nvidia Volta (yet to come) will take that Pascal chip and become the tock. Making it smaller with higher clock cycles. This will focus more UltraHD 4K and above. While Pascal will sit happily at 1440p resolutions.

For a single GTX 1080 card - either use 60Hz monitor to remain solid or if higher refresh rate use 165Hz G-SYNC to remain smooth in future years of gaming.

It's difficult to say but I'll wager a prediction. You'll have a good to excellent experience in the next two years as GTX 1080 is a top tier GPU.
After that time you'll notice that your card can't handle the most demanding newest games in highest settings. Then you'll have to decide if it's time to upgrade or be content with a GPU that is
still very capable but not top of the line anymore.

Here's a twist, it's in a laptop (CPU will not be a bottleneck) So will the 1080 be good still or should I get the SLI build?

Depends totally on the games you play. Performance will only scale with the additional GPU
in games that are properly optimized for SLI.
Check if the games you play are SLI compatible and if the additional cost is worth your money.
As was already said a single 1080 should do the trick in 1440 p for just some time.
I advise to stick with a single GPU if performance is satisfying as you avoid many SLI related problems.

Mainly fighting games (yes on PC I know) and some Call Of Duty, Tekken 7 cam run 4k on the 1080 so not worried about that, just the "when boredom strikes" game of Call Of Duty I want to play at 1440p 120-144 Hz. Can the 1080 do that?

A single 1080 on highest settings, no. Lower a few settings, and you're there.

Right and I'm not sure if you'll get consistent 140+ fps in highest settings but it should be doable if
you lower some settings a little bit.

♥♥♥♥♥♥♥♥♥♥ I'm hard headed might get the SLI build but I've heard nothing but issues from it.
That and there are external GPUs coming out so when I'm at home I can upgrade the card, but man the SLI build. Don't know when I became such a graphics head.
Regardless thanks for you inputs. 120hz maxed out looks like a real option.

It depends on the game. Not all games are created equally.

There are in fact games that can bog even an SLI Titan X Pascal setup at lower resolutions.

We just don't know what the future holds, either. For all we know, the next big advancement in 3D graphics might require a new GPU to utilize or to be able to get decent frame rates.

Understood. Last question (I swear)

So say I can reach say, 75 fps in Call Of Duty, and I'm on a 120hz monitor will I be able to see those extra frames? All I hear is once you play past 60fps there is no going back and I want to see this for myself..
