The ones that most likely won't have coil whine are the KFA HoF Limited Edition, MSI Lightning Z and EVGA KINGPIN, but they dont make 1080 of those models.
It's also worth mentioning that some GTX1080s are so loud that you wouldn't notice Coil Whine even if the card was effected. My Asus GTX1080 Strix OC is disastrously loud - once the cooling system reaches 30% I actually have to turn up my speakers - meaning any Coil Whine would be the least of my worries.
Just buy your hardware and trust that you'll receive a working product. There's no reason or justification for worry or paranoia.
