Do the 6700k and the 8700k uses the same socket?

Yes and no.

They both use LGA1151, but CoffeeLake uses a different pin layout, meaning that CoffeeLake CPUs will NOT work on Z170/Z270 boards, or any Skylake/KabyLake board.

CoffeeLake requires Z370/B360

Also note: Kaby Lake or Skylake processors do not work on Z370

yes they both use a different chipset. Z170 or Z370 dont mean the pin layout its the chipset
